Kids are out of school and finally the days are long and warm… Definitely time for a cocktail! Here are a few of my current favorites with both alcohol and non-alcohol options. Here’s to some healthful sipping!

Watermelon Bellini
This is delicious and something you can make for brunch for adults and the kids. Also a good festive color for 4th of July celebrations! The watermelon adds just the right amount of sweetness and is wonderfully hydrating.
Ingredients
1 cup watermelon, cubed
Champagne or sparkling cider
Instructions
Puree the watermelon in a blender.
Evenly divide the puree between 4 champagne glasses.
Fill the glasses with champagne or sparkling cider. Garnish with a piece of watermelon if desired.
Skinny Margaritas
I love a margarita but definitely don’t like all the sugar that’s generally in them- neither does my head the next morning! I always make a skinny style margarita with just a little agave to sweeten and let the lime and tequila flavors come through. I also like to add a little mint or jalapeno as a garnish to make it stand out. The best margarita you’ll ever have. Author: Cookie and Kate
Ingredients
Kosher salt or coarsely ground sea salt
2 ounces (1/4 cup) silver tequila
1½ ounces (3 tablespoons/about 1½ small limes) fresh lime juice
1 ounce (2 tablespoons/about ½ of a medium orange) fresh orange juice
1 teaspoon light agave nectar
1 lime wedge or round, for garnish

Who can feel guilty about a cocktail when it’s made with a green juice? Trust me on this one- it’s delicious and really good for you too. 🙂
Instructions
Blend in Juicer:
One cucumber
Two celery stalks
One head of romaine lettuce
One lemon
One small piece of fresh ginger
Two green apples
Add vodka to taste (or don’t)
Glow Juice
Okay- it’s not a cocktail, but it’s a delicious refreshing green juice that can replace one, or be your “morning after” refresher. It had 1TBS coconut sugar in the recipe but I took it out- it doesn’t need it. But if you need a little more sweetness in your green juice then add it back in!

Ingredients
2 cucumbers (peeled)
5-6 sprigs of fresh basil
2 mint leaves
The juice of 2 grapefruits
1 cup of cold water
¼ cantaloupe
Instructions
Place all of the ingredients into a food processor and blend until completely smooth. Place a mesh strainer over a medium-sized bowl (mine latched on so it made the process a bit easier). Then lay a cheese cloth over the top. Pour the juice mixture over the cheesecloth then pick up the outside edges of the cloth and bring together, then squeeze the pulp to release any remaining juice. Once finished, either serve immediately or refrigerate.
